Holiday Recipes From J&D: Derby Pie

Claudia Pachios, Sales Assistant has been with Jebb & Driggin Realty since the beginning.

This recipe is from her Godmother who lives in Louisville, Kentucky. Derby Pie is a southern traditional pie served on Derby Day in Kentucky and on Thanksgiving. Claudia has been serving Derby Pie during Thanksgiving at her home in Cape Elizabeth, Maine for over 30 years.

Derby Pie

This recipe makes two pies!

Derby PieIngredients
1 stick melted butter
1 cup pecans chopped
1 cup chocolate chips
1 cup corn light corn syrup
1 cup sugar
4 eggs
1 tbls Bourbon
2 shallow pie shells

Whisk together the eggs, sugar, corn syrup, and melted butter. Then stir in the chocolate chips.
Distribute the chopped pecans over the bottom of both pie shells.
Pour the filling evenly over the nuts.

Bake in oven at 350 degrees for 45 minutes.

Holiday Recipes from J&D: Pumpkin Bread, Cranberry Relish

In this series of blogs, the Jebb & Driggin Family shares some of their staple holiday recipes that are sure to taste and smell festive!

These two recipes are from Leslie Cotty, Agent at Jebb & Driggin Realty, Inc. She has been entertaining family and friends in her home in Chelmsford, Massachusetts for over twenty five years.

These are two simple holiday favorites.

Pumpkin Bread

Makes 1 loaf or 3 mini-loafs
I always double because it is a favorite and it makes for a great gift!

Pumpkin Bread Ingredients
1 cup unsifted flour
1 tsp pumpkin pie spice
3/4 tsp baking soda
1/2 tsp salt
2/3 cup canned pumpkin
2/3 cup sugar
1/3 cup buttermilk
1 egg
1 tbls butter or margarine, melted
1/2 cup chopped nuts, optional

Directions
Pre-heat oven to 350

  1. Stir together flour, pumpkin pie spice, baking soda and salt.
  2. Combine pumpkin, sugar, buttermilk, egg and butter in mixing bowl.
  3. Beat until thoroughly blended.
  4. Add dry ingredients; beat just until smooth.
  5. Stir in nuts.
  6. Turn batter into well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.
  7. Bake in oven at 350 degrees 45-50 mins or until toothpick inserted in center comes out clean.

Remove from pan; cool on rack. Wrap in aluminum foil.
Refrigerate overnight for easier slicing.

Cranberry Relish

A tradition on Thanksgiving in our house, always made by the aunt who never cooked.

Ingredients
3 cups fresh cranberries
1 orange, seeds removed
1 apple, peeled and cored
2 cups sugar

Directions
Wash cranberries well; put through meat grinder along with entire orange and apple. Stir in sugar and set aside (cold) for several weeks before serving. Improves with storage.

To update this use a food processor.
